You know what’s delicious? A smoothie. You know what’s even more delicious? The knowledge that your tasty drink is also packed with spinach, which happens to be a superfood providing vitamins, antioxidants, and fiber. Here’s the thing, though. As much as it sounds good to have a healthy smoothie, it needs to taste good or I won’t drink it.
The key, I learned from Simple Green Smoothies, is to blend up your veggies and liquid first, and then have a 40/60 ratio of veggies to fruit. In my take on this recipe, creamy bananas and sweet strawberries override the taste of spinach so everything tastes yummy. The color isn’t gorgeous, but trust me, my two year-old loves this recipe. If she’ll drink it, you’re golden.
Ingredients:
1 cup tightly packed baby spinach
1/4 cup 100% fruit juice. I used a cranberry raspberry variety
1/2 cup water
1 banana
6 strawberries (frozen)
Directions
- Blend spinach, juice, and water.
- Break banana into pieces, then add to blender.
- Add strawberries to blender, then puree until smooth.
- Pour into awesome glass you received as a housewarming present. Drink. Enjoy.
I find this is a great drink post-run, and because the strawberries are frozen it has a great texture.
