Seriously, that’s it.
I admit, I was once all about a delicious carb-filled breakfast, but in my recent quest to streamline my diet, processed grains have gone out the window. Enter 3-ingredient banana pancakes. Sweetened by bananas and filled with protein and fiber, these babies are winners. To confess: I like them better than the normal, floury kind. You don’t even have to mix them by hand – just throw everything in the food processor and give it a whirl. This is a true lazy-girl’s delight.
While you’re doing the blending, heat a pan to medium-low. Give that pan a quick blast of cooking spray. When your batter is ready, spoon it onto your pan by the tablespoon. This recipe works well with slightly smaller pancakes, so you could go bigger but they might fall apart. Consider yourself warned. Flip the pancakes when bubbles appear in the batter. Cook for another few minutes and remove from heat.
Serve the pancakes warm (or cold. Really, any way is delicious). You could sprinkle them with cinnamon, or top with syrup or peanut butter, but the truth is they are just perfect as is. Now, go cook a batch for someone you love.
